This spicy Middle Eastern herb sauce is also known as zhoug.
In a food processor combine: 2 cups fresh cilantro leaves 1 cup fresh Italian parsley 1 or 2 stemmed and seeded jalapeno chile peppers 1 Tbsp. lemon juice 3 halved garlic cloves 1 tsp. ground cumin 1/2 tsp. each kosher salt & ground coriander
Cover and process until finely chopped. With processor running, slowly add 1/2 cup olive oil in a steady stream until combined. Add 1/4 cup roasted, salted pepitas. Blend until nearly smooth.
