Recipe from Kroger
2 T. olive oil, divided 1 onion, finely chopped 3 garlic cloves, minced 1 lb. linguini or fettucini 1 bunch asparagus, ends trimmed, cut into 1-inch pieces 1/2 cup freshly grated Parmesan cheese Zest from 1 lemon Salt & fresh ground pepper, to taste
Bring large pot of salted water to boil. Meanwhile, heat 1 T. olive oil in medium skillet. Saute onion until soft; add garlic and saute additional minute. Remove from heat.
Add pasta to boiling water. Cook according to package instructions - in final 2 minutes, reserve 1 cup pasta water, then add asparagus to boiling water. Drain cooked pasta and asparagus. Return to pot; add 1 T. olive oil, onion and garlic mixture, Parmesan, lemon zest and 1/2 cup reserved pasta water. Season with salt & pepper; add additional pasta water as needed. Serve, refrigerating any leftovers.
