Oatmeal Blueberry Muffins

Ingredients:

1 cup quick oats 1-1/4 cup organic, whole grain flour 1/2 cup sugar 1 tsp. baking powder 1/2 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. salt 1 egg 1/2 cup almond or oat milk 1/3 cup canola or coconut oil 1 cup fresh blueberries


Directions:

  1. Heat oven to 400 degrees F.

  2. Combine dry ingredients in bowl.

  3. Mix egg, milk, and oil into dry ingredients.

  4. Fold in blueberries.

  5. Fill greased or paper-lined muffin cups 2/3 full with batter.

  6. Bake 18 to 22 minutes or until golden brown.

Makes 12 muffins.
