These muffins are moist, nutritious, & delicious!
INGREDIENTS:
1/2 cup butter, softened
2 eggs
1 cup mashed bananas
1/2 cup raw, unfiltered honey
1/4 cup plain yogurt
1 teaspoon baking soda
1-1/2 cups flour (any combination of whole grain, unbleached, and/ or gluten-free flour)
1/2 teaspoon sea salt
1 cup rolled oats
INSTRUCTIONS;
Preheat oven to 375 degrees F.
Grease 12-18 cup muffin tin.
Combine butter, eggs, bananas and honey in a mixing bowl.
Mix yogurt and baking soda together and add to butter mixture. Cream well.
Sift together flour and salt. Add to creamed mixture, mixing until just blended.
Stir in oatmeal.
Fill muffin cups 2/3 full of batter.
Bake 18-20 minutes. Remove from pans and cool.
