Italian Meat Sauce

From my Italian friend, Susie, who taught me to make this!

Ingredients: 1 - 1-1/2 lbs. ground beef 1/2 medium onion 2 stalks celery 2 carrots 2 cloves garlic 2 tablespoons olive oil 3 - 4 cans (28-oz. each) whole tomatoes 3 tablespoons tomato paste 3-4 whole cloves Fresh parsley, chopped (a few sprigs) Salt & pepper

Directions: Brown ground beef in large pot. Finely chop onion, celery, carrots, and garlic and then add to meat. Add olive oil to pot. Stir and saute together. Drain canned tomatoes and save juice. Chop in blender. Add tomatoes and juice to pot, then tomato paste and cloves. Let simmer for a few hours. then add parsley, salt and pepper. Skim fat off top during cooking. The cloves give this sauce a wonderful flavor! You may want to remove them before serving, if you can find them!
