Glazed Ground Turkey Meatloaf

Ingredients: 1-1/2 lbs. ground turkey

3/4 cup carrots, shredded

3 tsp. garlic, minced

1 cup onion, minced

1 tbsp. fresh parsley, chopped

1/2 cup fresh spinach, chopped

1/3 cup shredded Mozzarella cheese

1/4 cup ketchup

2 eggs

1 tbsp. Worcestershire sauce

1-1/4 tsp. sea salt

1/2 tsp. pepper

1 tsp. Italian seasoning

1 cup bread crumbs, plain


Glaze Ingredients:

1/2 cup ketchup

2 tbsp. Worcestershire sauce

2 tbsp. brown sugar


Instructions:

  1. Preheat oven to 350 degrees F.

  2. Add ground turkey, breadcrumbs, minced onion, minced garlic, shredded carrots, fresh spinach, shredded mozzarella, ketchup, parsley, eggs, Worcestershire sauce, salt and pepper into a large bowl.

  3. Using a fork or clean hands, mix until everything is fully incorporated.

  4. Spray a loaf pan with cooking spray and pour meat into pan; OR line a sheet pan with parchment paper and pour meat onto prepared pan. Use your hands to form into a loaf shape, trying to keep it level so it cooks evenly.

  5. Bake for 30 minutes, and while baking, mix together glaze ingredients: 1/2 cup ketchup, 2 tbsp. Worcestershire sauce, & 2 tbsp. brown sugar.

  6. Remove meatloaf from oven and brush glaze all over (pour over loaf and spread with brush or spatula).

  7. Place back in oven for another 30 minutes, or until internal temperature reaches 165 degrees.

  8. Remove and let cool for 10 minutes before serving. Sprinkle with chopped parsley to garnish if desired.
