Cranberry Nut Bread

From The Fanny Farmer Cookbook and my childhood! I learned to make this as a young girl and it has always been a favorite, especially around the holidays.


1 orange 2 T. butter 1 egg 1 cup sugar 1 cup cranberries, chopped 1/2 cup chopped walnuts or pecans 2 cups flour 1/2 tsp. salt 1-1/2 tsps. baking powder 1/2 tsp. baking soda


Preheat the oven to 325 degrees. Butter a loaf pan. Grate the rind of the orange; squeeze out all the juice into a measuring cup and add enough boiling water to make 3/4 cup. Add the orange rind and butter and stir to melt the butter. Beat the egg in another bowl and gradually add the sugar, beating well. Spoon into the pan and bake for 1 hour. Remove from the pan and cool on a rack.
