Ingredients
1- 15 ounce can black beans, rinsed and drained
1 1/2 cups chopped, seeded cucumber (1 medium)
1/2 cup chopped tomato (1 medium)
1/2 cup sliced green onions (4)
1/4 cup lime juice
1 tablespoon snipped fresh cilantro
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
Directions
In a medium bowl combine beans, cucumber, tomato, green onions, lime juice, cilantro, oil, cumin, salt, and cayenne pepper. Cover and chill for 4 to 24 hours.
Use a slotted spoon to serve salsa over grilled bratwursts, pork, chicken, or salmon.
