Black Bean Salsa

Ingredients

  • 1- 15 ounce can black beans, rinsed and drained

  • 1 1/2 cups chopped, seeded cucumber (1 medium)

  • 1/2 cup chopped tomato (1 medium)

  • 1/2 cup sliced green onions (4)

  • 1/4 cup lime juice

  • 1 tablespoon snipped fresh cilantro

  • 1 tablespoon olive oil

  • 1/2 teaspoon ground cumin

  • 1/8 teaspoon salt

  • 1/8 teaspoon cayenne pepper

Directions

  1. In a medium bowl combine beans, cucumber, tomato, green onions, lime juice, cilantro, oil, cumin, salt, and cayenne pepper. Cover and chill for 4 to 24 hours.

  2. Use a slotted spoon to serve salsa over grilled bratwursts, pork, chicken, or salmon.
