Banana Breakfast Cookies

This recipe and a plate of these yummy cookies were shared with me by my friend Catherine. The recipe came from the following website: Five Heart Home - https://fivehearthome.com.


Ingredients:

2 cups quick oats 1/2 tsp. cinnamon 1/2 tsp. baking powder 1/2 tsp. baking soda 2 large bananas (ripe or slightly overripe), mashed (about 1 cup) 1/2 cup peanut or other nut butter 2 tablespoons to 1/4 cup honey 1 tsp. vanilla 1/2 cup chopped pecans or walnuts 1/4 cup chocolate chips or raisins, optional


Instructions:

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

  2. Measure oats, cinnamon, baking powder, baking soda, and salt into a large bowl; stir to combine. Stir in mashed banana, peanut butter, honey, vanilla, nuts, and chocolate chips.

  3. Scoop dough by tablespoon or scant 1/4 cup measuring cup to form 12 cookies. Flatten the top of each on the baking sheet and bake on center rack for 14 to 16 minutes.

  4. Allow cookies to cool completely on baking sheet before storing in airtight container.

For gluten-free cookies, be sure to use GF oats.
