Avocado Butter

1 large ripe avocado, peeled and cubed 2 tablespoons fresh lime juice ½ pound sweet butter, softened ⅛ teaspoon ground ginger


Put avocado in the blender with lime juice. Blend until creamy. Blend butter and ginger. Chill. Yields about 1½ cups.


This is a good spread with tostadas, crackers or fresh vegetables and also as the butter on any kind of sandwich. It makes an excellent dip for beef fondue and it can be frozen.
